I bought some of this at my farmers' market last weekend. I made a cream of funky cauliflower soup with it, and it was pretty good. I first learned about this when I worked (briefly) in a foofy, uber cool San Francisco restaurant. It was so fun to have this stuff out on the counter - it really IS mesmerizing!
